Yummy fruit loaf and muesli slice

This week the children made 2 yummy lunchbox foods.  Both are cheap and easy to make .  Have a go at home with your tamariki!

1 cup dried fruit
1 tablespoon butter
1/2 cup sugar
1 tablespoon golden syrup
1/4 teaspoon salt
1 cup boiling water
2 cups SR flour
Bake approx. 30 mins at 180.
Mix fruit, butter, sugar, golden syrup and salt together in bowl. Pour on boiling water and wait for butter to melt. Add flour and mix quickly and thoroughly.
1 cup rolled oats
1 cup sultanas
1/2 cup wholemeal flour
1/2 cup sr flour
1/2 cup raw sugar
1/2 cup coconut
150g butter or nutella
1 tablespoon honey
Sift flours into bowl with sultanas, oats, sugar and coconut. Mix. Melt honey and butter together. Combine dry to wet and mix well. Press into lined tin. Bake 180 for 15-20mins. Cut while hot, remove when cold.
Both recipes are quick and easy to make, they are filling, and are perfect for lunchboxes. They both last well for at least 5 days in a airtight container and the fruit loaf freezes well .  Get creative with the fruit that you add to the loaf or try adding nuts/seeds to the muesli slice. Best of all they are YUMMY!.
